3 Easy Dinner Recipes I'm Loving

You guys know how much I love cooking, and I’m always on the lookout for new recipes to try. That said, in order for something to make it into the permanent weekly rotation ~ because let’s face, it I’m a creature of habit ~ it’s got to be ridiculously delicious. These three recipes all fall into the ridiculously delicious category. I’ve made them over and over again and doubt I’ll ever stop.

Sivan Ayla’s Salmon Bowls

If you only make one recipe from this post, this is it. I’ve made the salmon bowls for so many people and they all say it’s one of the best dishes they’ve ever tasted. John and I make these AT LEAST once a week - we are obsessed. My favorite thing about this meal is that it feels fancy and complicated, but it’s actually super easy to make.

When I made the bowl photographed above, we had some leftover corn on the cob from the night before, so my mom and I sprinkled the extras on top. Typically, John and I will roast some broccoli or steam some edamame to have on the side, but you don’t need to add anything. I also substitute coconut aminos for the soy sauce (it’s a bit healthier and milder and tastes the exact same) and forego the black sesame seeds on top (because who’s got those lying around??). For the eggs, boil for 6 1/2 minutes, then pop them directly into a bowl of ice water to stop the cooking - they’ll come out just right!

Giada De Laurentiis’s Turkey Bolognese

John’s family has observed “Pasta Night” every single Wednesday for as long as I’ve known them. The star of the show is Giada De Laurentiis’s Simple Bolognese, a delicious and hearty meat sauce. The original recipe is made with beef, but over the years they’ve transitioned to using ground turkey instead, which is perfect because I don’t eat beef. Recently, I came across another similar but simplified Giada Turkey Bolognese version. This is what I’ve been using for my own pasta nights (and what I’ve linked above). I recommend doubling and freezing the leftovers - it’s the perfect big family meal for colder weather!

The simplified recipe calls for a good Marinara (I use Trader Joe’s Organic Tomato Basil Marinara) instead of all the crushed tomatoes and seasonings. Basically all you have to do is stir that in with the rest of the garlic, veggies and turkey - it couldn’t be easier! I always chop up some extra carrots and celery to make the sauce chunkier and I use raw ground turkey instead of shredded turkey. Serve with zoodles or fresh pasta!

Coco Kislinger’s Creamy Vegan Alfredo Sauce

She’s my boss and damnnnn does she know a thing or two about sauce! It doesn’t look like much from the pictures, but I could honestly eat Coco’s Alfredo plain by the spoonful. Similar to the bolognese, I like to whip up a big batch and freeze for later. Not only is it the easiest sauce you’ll ever make (all you need is a blender), but also you probably already have all the ingredients in your cupboard. I usually pour it over warm cauliflower gnocchi or brown rice pasta and add some roasted asparagus or broccoli. It’s also amazing with chicken mixed in, Maggianos style. :)
